Easy Gluten Free Granola

This easy Gluten Free Granola recipe requires one bowl , is super simple to make and even more delicious! Prep time: 5 minutes Cook time: 50 minutes. This recipe makes 4 cups of granola.

I don't know about you but I get bored with the same thing for breakfast day in and out. I have tried many store bought granolas just to save time, but the amount of extra ingredients and added sugars in these mixes are something I can live without. After trying this recipe numerous times, I cannot believe how easy it actually is to make homemade gluten free granola. There are so many different toppings and substitutes you can add to this mix, but this is my go to combination. Most of the ingredients are already in your pantry. This is a great thing to make when you have a little time to do some tasks around the house. The prep is super simple. Throw all the ingredients in a bowl, mix and put on a sheet pan. That's it! I am all about simplicity. The easier the recipe, the better. Did I mention it is delicious? You can literally taste every ingredient. The first half hour baking is a perfect time to get some house work done, or even a mini HIIT workout. If that is not enough, the aroma that comes from the cinnamon is amazing. Smells like Christmas came early, its so good!

It is also hard to find Gluten Free Granola that's not a fortune in the store. Oats are easy to find, but you have to be cautious because most oats are processed in places where they can be contaminated by gluten. So while the oats themselves don't contain gluten, they cannot be labelled as gluten free. For me, I am not severely sensitive to gluten. I have to avoid big meals with Gluten, like pasta and bread. If its processed in a facility with gluten I would be fine, but why risk it when a gluten free option like this is available.

If you like to add dried fruit or chocolate chips to this recipe, have at it! Its the same amount of cook time. Depending on my mood, the season, or whatever I have in my pantry, I mix up the ingredients. For this mix, because its fall, I used mixed nuts with hazelnuts, almonds, cashews, and pecans. The nuts I use are unsalted, so just be cautious how much salt you add if you have salted nuts. I have used walnuts and pumpkin seeds in this recipe too. If you are adding chocolate chips, try not mix too much on the half way mark, or your chunks of chocolate will become chocolate goop. Adding dried fruit to this mix is also a great addition. I love dried cherries so they make it into my granola often. You can also just add dried fruit after as a topping, that works just as well.
As for the sweetener, this recipe requires pure maple syrup. On our recent trip upstate, we picked up a local maple syrup in Cooperstown, NY. I always love supporting local businesses, so that's a plus for this recipe, but any store bought PURE maple syrup will do. As an alternative to syrup, you can definitely use honey. Just substitute it for the same measurements. The honey will be a little stickier so heat it a little before mixing in.

I use coconut oil in this recipe, it adds a nice flavor and aroma. You can substitute with avocado or light olive oil also. I steer clear of canola and vegetable oils.
That being said make this recipe what you want. I try and choose healthy options for me and my family. When its made at home, you know what your putting in your food and can enjoy it guilt free, without the extra preservatives, sugars, and whatever else they put in our food these days. Easy Gluten Free Granola

Ingredients:
3 cups Gluten free sprouted rolled oats ( I used One degree organic foods)
¾ cup pure maple syrup
¾ cup liquid coconut oil (if you have solid just microwave to get liquid)
1 cup chopped unsalted nuts
1 tablespoon pure vanilla extract
1 tablespoon almond extract
2 tsp. cinnamon
2 tsp. salt
Directions
Preheat oven to 280 degrees. Line 12x18 sheet pan with parchment paper.
In a large bowl add all ingredients together. There is no specific order, just dump and mix
Spread mix onto parchment paper evenly coating the entire pan.
Cook in oven for 30 minutes. Remove from oven and give it a stir around, then spread back out.
Cook for another 20 minutes. Remove from oven and let cool for 10 minutes.
Gently stir around to get clumps of granola
Serve with your favorite toppings.
This recipe makes 4 cups of granola. If you want to make more just simply double the recipe. I prefer my Gluten free granola with a little almond milk and fresh fruit. You can serve this with yogurt, or as a snack, however you usually eat your granola.
